4 tablespoons of olive oil or vegetable oil,

Preheat your oven hot (400°F)
Prepare the roast: separate the meat from the bone
Place it in a roasting pan and drizzle with oil
Bake for about 2 hours or until the meat is tender, adding water to the pan as needed
Transfer to a serving platter
Make the sauce: combine all ingredients in a pot, cover and simmer over low heat, stirring occasionally, for about 40 minutes
Remove from heat, blend in a blender and strain through a sieve
Reheat over medium heat, season with salt to taste, and serve over the roast.
