2 lbs chicken breast, cut into 4 pieces
1/3 cup lime juice
1/3 cup olive oil
1 minced clove of garlic
salt and pepper to taste
8 medium bananas
2 tbsp Karo or honey
lime zest for garnish

Wash the chicken pieces and pat dry
Arrange in a shallow baking dish
Mix well the lime juice, olive oil, garlic, salt, and pepper
Pour over the chicken pieces
Refrigerate for several hours, turning occasionally
Bake at moderate heat for about 45 minutes or until the chicken is tender
If drying out, brush with additional olive oil
In the last 10 minutes, add the bananas, previously brushed with Karo or honey
Serve with lime zest
