1/3 cup unsalted butter, softened
Two cups of bread crumbs
1/2 cup raisins without seeds
6 tablespoons chopped almonds
Two tablespoons ground cinnamon
1/4 cup grated cheese
1/4 cup chicken broth
Two teaspoons salt
1/4 teaspoon black pepper
One large whole chicken
1/3 cup unsalted butter, softened

Melt 4 tablespoons of butter in a saucepan and add bread crumbs
Cook for 5 minutes, stirring constantly
Add the raisins, almonds, cinnamon, cheese, and broth
Mix well
If the mixture seems too dry, add a little more broth
Mix again
Mix salt and pepper and rub it all over the chicken inside and out
Stuff the chicken and close the opening carefully with string or skewers
Baste the chicken with the remaining butter
Roast in a medium oven until cooked through
During roasting, add 1/2 cup of hot water and baste the chicken frequently.
