3 tablespoons of olive oil
1/2 cup of finely chopped onion
1 1/2 cups of pork loin cut into strips
1 1/2 cups of chicken broth or more if needed
1/2 cup of finely chopped fresh cilantro
1 cup of sliced mushrooms
2 tablespoons of cornstarch
1 dash of cayenne pepper
salt and pepper to taste
1 1/2 tablespoons of soy sauce
2 tablespoons of water
3 tablespoons of olive oil

Fry the olive oil and sauté the onion until it's translucent
Add the chicken broth, cilantro, mushrooms, and soy sauce
Let it simmer for about 25 minutes, adding more broth if needed
Mix the cornstarch, cayenne pepper, salt, and water
Add this mixture to the pan and let it cook slowly, stirring until it thickens
Check the seasoning and serve with rice
Distribute into 4 portions.
