1 small chicken (800g)
Stuffing:
1 ripe mango
1 banana
1/2 teaspoon of curry powder
1 pinch of salt

For brushing:
1 1/2 tablespoons of honey
1/2 teaspoon of curry powder

25g of butter or margarine

Wash and pat dry the chicken
For the stuffing, peel the mango, remove the seeds, and cut into thin slices
Peel the banana and cut into equal slices
Season the fruits with curry powder, salt, and a pinch of pepper
Salt the chicken inside and out
Stuff the chicken with the fruit mixture and close or tie with toothpicks
Pile a large sheet of aluminum foil on top of the chicken, lightly brush with oil
Wrap the chicken tightly in the foil, but not too tight
Bake in the oven at 350°F (175°C) for about 50-60 minutes, or until cooked through
15 minutes before serving, mix honey and curry powder and brush over the chicken several times
When the chicken is ready, remove it from the foil
Remove any strings or toothpicks
Remove the stuffing
Cut the chicken into bite-sized pieces and arrange on a platter with the stuffing
Pit the bananas for the accompaniment, cut in half and fry in butter or margarine until golden brown
Drain excess liquid from the foil and pour it over the banana several times
Place the banana alongside the chicken
Serves 2-3 people
For a larger chicken, double all ingredients.
