2 small chicken breasts, cut in half

1/2 cup of tomato sauce
1 handful of spinach
2 tablespoons of butter or margarine

Heat the olive oil and brown both sides of the chicken breasts
Season with salt and pepper to taste
Combine the tomato sauce with the chicken broth and pour over the chicken pieces
Cook slowly for 45 minutes, until the chicken is tender
While that's cooking, cook the spinach
Season with salt and pepper to taste, and top with butter or margarine
Arrange in a large serving dish and place the chicken pieces on top of the spinach
Pour the remaining sauce from the pan over the top
Serve hot.
