In a bowl, season the chicken breasts with salt and black pepper. Reserve
Heat the butter with olive oil in a large frying pan over high heat, about 1 minute
Add the reserved chicken and fry, stirring occasionally with a wooden spoon, until it starts to brown, about 3 minutes
Pour in 1 cup of water (240 ml), scrape the bottom of the pan well, and cook until the chicken is golden brown, about 20 minutes
Remove the chicken and reserve it in the bowl used for seasoning
Add the onion and garlic to the frying pan and sauté, stirring occasionally with a wooden spoon, until the onion is soft, about 1 minute
Add the flour and tomato puree, mix well, and gradually add the chicken bouillon cube, stirring constantly, until you get a thick sauce, about 2 minutes
Place the reserved chicken in the frying pan, cover, reduce heat to low, and cook, scraping the bottom of the pan occasionally and adding the remaining water slowly, until the chicken is tender, about 25 minutes
Remove from heat
Add the estragon and yogurt and mix well
Transfer to a serving dish, sprinkle with Parmesan cheese, and serve immediately
