1 pork loin, about 2 kg
3 tablespoons of finely chopped onion - 45 g
3 pieces of crispy bacon, diced - 66 g
2 cups of cooked and mashed sweet potato - 440 g
3 fresh green beans, fried and diced - 255 g
Salt and black pepper to taste

Open the pork loin, forming a large cutlet
Fry the onion with the bacon until it's golden brown
Mix in the remaining ingredients and spread over the pork loin
Roll up and tie with kitchen twine
Place in a well-greased baking dish and put in the oven
Bake and add hot water as needed to prevent drying out
To serve, cut into slices
Serve with farofa, if desired
