Arrange the chicken pieces in a flat dish
Sprinkle with salt
Mix the egg with the frozen orange juice, then pour over the chicken pieces
Let it rest in the refrigerator for 1 hour, turning the chicken pieces once
Crush the cornflakes or blend in a blender
Mix with grated coconut
Coat the chicken pieces with this mixture
Place in a baking dish lined with aluminum foil
Brush with melted butter or margarine
Bake in a moderate oven for approximately 1 hour
Serve with orange zest and shredded coconut, garnished with 4 equal portions.
