1 small package of instant cornmeal mix (available at supermarkets)
1/2 pound of lizard
3 tablespoons of butter
1 cup of hot water
1 sprig of rosemary
2 tomatoes, peeled and seeded, chopped
1 onion, chopped
2 tablespoons of parsley and chives, chopped
1 minced garlic clove
1 tablespoon of cornstarch
Salt, black pepper, and grated cheese to taste
1 egg yolk for brushing

Season the meat with salt and pepper
Place it in a pressure cooker with 2 tablespoons of butter and let it brown
Add hot water and rosemary, then cover the cooker
Cook until the meat is tender
If necessary, add more hot water
Serve and reserve
Sauté the onion and garlic in the remaining butter and add parsley and chives
Add the tomatoes and cook for 5 minutes
Add the meat and stir well
Sprinkle cornstarch through a sieve and stir until it thickens slightly
Turn off the heat and reserve
Prepare the cornmeal according to the manufacturer's instructions and assemble the dish
In a greased refrigerator, spread half of the cornmeal and top with the meat
Make a new layer with the remaining cornmeal and brush with egg yolk
Sprinkle with cheese and bake in the oven.
