1/3 cup of melted butter
1/3 cup of olive oil
1 tablespoon of dried oregano
1 tablespoon of grated lime zest
4 medium trout (1 kg)
4 black olives without pit, cut in half
3 medium tomatoes, cut into four wedges
2 green peppers, diced
2 canned anchovy fillets, diced
Salt to taste

Preheat the oven to a medium temperature
Arrange the trout fillets side by side on a baking dish and surround them with tomato and pepper slices
Mix the melted butter with the olive oil
Dress the trout with half of this mixture and sprinkle with half of the dried oregano
Bake for 15 minutes or until the fish starts to flake
Do not turn off the oven
Transfer the trout to a plate, remove the skin, and place it back in the baking dish
Top the trout with black olives and anchovy fillets, drizzle with any remaining butter mixture, sprinkle with the rest of the oregano, lime zest, and salt
Bake for an additional 15 minutes or until, when pierced with a fork, the fish flakes easily.
