1/4 cup of butter
1 chopped onion
800g boneless, skinless chicken breast cut into cubes
Salt to taste
2 tablespoons of all-purpose flour
1 tablespoon of colorant
2 cups of chicken broth
1/2 cup of cashew nuts
1/2 teaspoon of grated ginger
2 tablespoons of chopped cilantro
2 mangos or tommy cut into cubes

Heat the butter in a skillet and bring to medium heat
Add the onion and chicken, cook for 5 minutes or until golden brown
Season with salt and add the flour and colorant
Mix well for one minute until the chicken is fully coated
Add the chicken broth and mix well
Add the cashew nuts and ginger
Simmer for 25 minutes or until the chicken is tender
Add the cilantro and mango cubes
Simmer for an additional 2 minutes and serve.
