Remove the bones from the fish and cut it into squares
Make a batter with the eggs, salt, and potato starch
Spread that batter over the pieces of fish, covering them completely
Heat some olive oil in a skillet, add the fish pieces covered with batter, and stir occasionally
In a separate bowl, mix together the remaining batter, Sherry, a pinch of salt, chopped onion, orange peel, and a little water
When the fish is almost cooked, pour that mixture into the skillet and let it thicken.
