Season the chicken pieces with salt and pepper
A heat a quarter of the butter in a pan
Fry the chicken pieces until golden brown, then turn them over
Cover the pan
Let it cook for 30 minutes
(If it dries too much, add a little water.) Heat the oven
Melt the remaining butter in a pan, then add the wheat flour and mix well
Heat the milk to boiling point and add all at once to the flour mixture, stirring vigorously until the sauce is smooth and thick
Add 1 tablespoon of grated Parmesan cheese
When melted, add the beaten egg yolks with a little of the warm sauce
Dust the bottom of a refractory dish with 1/4 cup of grated Parmesan cheese
Arrange the chicken on top
Cover with the sauce
Put it in the oven while hot for 5 minutes
Mix the remaining Parmesan cheese with breadcrumbs and sprinkle over the chicken
Leave it in the oven until lightly browned
