1 medium chicken cut into pieces
salt and pepper to taste
3 tablespoons of olive oil
1/4 cup of water
1 medium onion, chopped
1 medium green bell pepper, seeded and chopped
1/2 cup of chopped fresh parsley
1/2 pound of peeled tomatoes
3 tablespoons of chopped fresh cilantro
1 medium chicken cut into pieces

Season the chicken with salt and pepper
Place the chicken pieces in a hot skillet with olive oil, skin side down, in a saucepan
Brown both sides; remove from the skillet
Add water to the saucepan and scrape up any browned bits
Add the onion, green bell pepper, and parsley; cover; cook for 5 minutes
Add the chicken pieces and chopped tomatoes
Bring to a simmer
Cover the saucepan, reduce heat, and let it cook slowly for 40 minutes, or until done
Serve in a serving dish and sprinkle with cilantro
Serve with rice
