For the asparagus:
Salt and pepper the asparagus in a pan with some olive oil, then set aside
For the cod:
Season the cod fillets with salt and black pepper, and cook them in an anti-stick frying pan with a little bit of olive oil
Finish cooking it in the oven at 200°C
For the lemon thyme oil:
Mix the olive oil with salt, black pepper, and finely chopped lemon thyme leaves
Set aside for at least 3 hours to allow the flavors and aromas to meld together
Assemble the dish by placing the cod fillets on a bed of asparagus and garnishing with the sauce and a sprig of lemon thyme.
