Season the chicken with garlic and salt
Pickle the linguica and spread it over the chicken
Distribute the mozzarella slices and sprinkle with parsley
Wrap the chicken like a roulade and tie firmly with kitchen twine
In a buttered baking dish, place the chicken and bake in a preheated oven at 180°C for 30 minutes or until golden brown
If it gets too dry, baste with the fat that forms in the baking dish from time to time
Slice and serve with green leaves.
