1 chicken breast, cut into pieces
1 1/2 tablespoons of olive oil
2 medium onions, cut into rings
salt to taste
1/2 teaspoon of black pepper
2 cups of cooked potato cubes
4 fresh tomatoes, cored
1 tablespoon of oregano
3 tablespoons of chopped cilantro

Rinse the chicken pieces and pat them dry
In a 6-liter pressure cooker, fry the chicken in olive oil, adding some pieces at a time until golden brown
Repeat with all the pieces
Remove the cooked chicken and set aside
Add the onions to the pot and sauté for 5 minutes
Add the chicken back to the pot along with all other ingredients
Let it come to a boil, then close the lid, attach the valve, and cook at high pressure until the valve starts to release steam
Reduce heat and let it simmer for 15 minutes
Remove from heat and let cool for 5 minutes
Place the cooker under cold running water to prevent any remaining pressure
Carefully remove the valve and lid
Serve hot.
