1 1.5 kg chicken cut into pieces
2 tablespoons of olive oil
1/2 cup of hot water
1/2 cup of soy sauce
1/2 teaspoon of grated ginger
1 tablespoon of lemon juice
1 small onion, chopped
1 tablespoon of cornstarch
juice from 1 lime, and 1/4 cup of cold water

In a large pan, brown the chicken pieces in olive oil
Add the hot water, soy sauce, ginger, lemon juice, and chopped onion
Stir well to combine
Cover and cook for 30 minutes or until the chicken is tender
Mix the cornstarch with cold water, add it to the sauce, and cook for an additional 1-2 minutes
Serve in four portions.
