1 medium onion, cubed
1/4 cup chopped fresh parsley, leaves separated
1 tablespoon grated ginger
Sauce
3 tablespoons soy sauce
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1/2 cup water

1 In a bowl, combine chicken breast with olive oil and microwave on high for 4 minutes, stirring once during cooking
Remove from microwave and mix in remaining ingredients, excluding the sauce
Cook on medium heat for 12-15 minutes, or until chicken is firm to the touch, stirring three times during cooking
2 Mix sauce ingredients in a jar and microwave on high for 3-5 minutes, stirring once to thicken
Pour this sauce over the cooked chicken and vegetables, mix well, and return to microwave for 3 minutes on high heat
Serve immediately.
