1/4 cup of olive oil
1 large onion finely chopped
3 cloves of garlic minced
3 tomatoes diced with seeds removed
4 tablespoons of lemon juice
1 green pepper finely chopped
500g crab meat
1/4 cup of chopped parsley
1 finger-sized peppercorn, crushed
5 eggs separated
Salt to taste

In a frying pan with olive oil, sauté the onion and garlic until they're soft and translucent
Add the tomato, lemon juice, green pepper, and crab meat
Cook for 5 minutes over high heat, stirring occasionally
Add the parsley, peppercorn, and salt
Stir well to combine
Beat the egg whites until fluffy, then add the yolks and beat until smooth
Pour the crab mixture into a baking dish and top with the egg mixture
Bake in a moderate oven (180°C) that's been preheated, until lightly golden brown
Serve immediately
