12 quail eggs
2 tablespoons olive oil
1/4 teaspoon green pepper
1/4 teaspoon red pepper
1/4 cup thinly sliced onion
1/4 cup thinly sliced zucchini
1/4 cup thinly sliced Portuguese sausage, peeled and thinly sliced
1/2 cooked potato, thinly sliced
Salt and black pepper to taste
12 quail eggs
2 tablespoons olive oil

Step 1
Crack the eggs into a bowl and reserve
Heat olive oil in a skillet
Saute the peppers, then the zucchini
Step 2
Add the onion and sausage
Drizzle with more olive oil if needed, and add the potato
Step 3
Pour the quail eggs over the top
Let it cook at low heat until the whites are set and the yolks are still moist (don't stir)
Season with salt and black pepper.
