Wash the spinach and cut it into strips
Beat the eggs well and combine with the spinach
Season with salt and pepper and mix

Grease the non-stick frying pan with oil and cook over high heat
Reduce heat, pour in the frittada and let the bottom side brown
Slide it onto a plate and put it back into the frying pan to brown the other side
Serve hot.
