2 cups of green jackfruit (Caju Verde)
4 sticks of dried shrimp
4 tablespoons of olive oil
3 tablespoons of vegetable oil
3 tomatoes
1 green or red bell pepper
1 large coconut
1 large onion
1 tablespoon of tomato paste
6 eggs
Parsley and salt to taste
2 cups of green jackfruit (Caju Verde)

6 eggs
Parsley and salt to taste
Season the jackfruit with garlic, salt, and tomato paste
Soak the dried shrimp in water until rehydrated, then chop them into small pieces
Grind the coconut, parsley, tomato, and bell pepper together
Saute the onion in olive oil until slightly browned
Add the jackfruit mixture and stir well
Let it cook for a bit
Add 1/2 cup of grated coconut, 1/2 cup of water, and 1/4 cup of egg whites
Mix well
Add the remaining 3 eggs, beaten with a little flour, and mix until combined
Check the seasoning
After everything is cooked, place it in a greased baking dish, cover with the remaining 3 eggs mixed with a little flour, and bake until golden brown
Serve warm.
