1 envelope of unflavored gelatin, white
1/3 cup of water (60 ml)
6 cups of natural yogurt (200 g each cup)
1 cup of sugar (180 g)
1 tablespoon of vanilla extract

In a small, heatproof bowl, sprinkle the gelatin over the water and let it hydrate for 5 minutes
Heat over high heat in a bain-marie and stir until dissolved. Reserve
In a large bowl, combine the natural yogurt, sugar, vanilla extract, and dissolved gelatin to obtain a smooth mixture
Cover with plastic wrap and place in the freezer for at least one day or 6 hours
Just before serving, remove from the freezer and blend in a processor
Place back in a bowl, cover with plastic wrap, and place in the freezer for about 15 minutes, just to chill slightly (do not re-freeze)
Serve immediately
