4 egg yolks

1/3 cup of Porto wine or liqueur

In a small bowl, whisk with an electric mixer the egg yolks and sugar until frothy
Slowly add the wine while continuing to whisk
Place the bowl over simmering water but not boiling, and whisk for another 10 minutes
Remove from heat, cover the bowl and let it cool in the refrigerator
In a blender, blend the fresh cream until it reaches soft peaks
Mix with the chilled egg yolks, cover again and refrigerate until serving time
Peel the oranges, remove the white part and seeds, and cut into thick slices (do not discard the juice that forms)
Mix the juice with the orange slices and pineapple
Cover and refrigerate until serving time
Divide the fruits into 6 portions and top with chilled cream
Garnish with basil leaves
Serve 6 times
