1 envelope of unflavored gelatin (12 g)
1 tablespoon of grated carrot (12 g)
1/2 teaspoon of salt
1 1/2 cups of water
4 tablespoons of lemon juice
1 3/4 cups of red mashed potato cut into small cubes without peeling
1/2 cup of chopped celery
1/2 cup of chopped pecans
lettuce leaves
mayonnaise

Melt the gelatin, carrot, and salt in a small saucepan
Add 1/2 cup of water
Stir until the gelatin has dissolved
Add the remaining water and lemon juice
Bring to a simmer
Cool slightly and refrigerate until it thickens slightly
Mix in the mashed potatoes, celery, and pecans
Pour into a decorative mold and refrigerate until firm
Unmold over lettuce leaves and serve with mayonnaise
