1 chicken breast cut into pieces, legs and 4 thighs
2 tablespoons of lime juice
1/4 cup of dendê oil
1 large onion chopped
1 cup of coconut milk
1/3 cup of toasted peanut butter
1 tablespoon of grated ginger
1/3 cup of roasted and ground cashews
2 tablespoons of chopped cilantro
Salt to taste

Season the chicken with salt and lime juice
Set aside
Place the dendê oil and onion in a microwave-safe dish and microwave on high for 5 minutes
Add the chicken, coconut milk, peanut butter, ginger, and cashews
Mix well and microwave for an additional 40 minutes at the same power level
Stir occasionally during cooking
Sprinkle with cilantro and serve with white rice if desired
Serve hot.
