Cut the chickens into large pieces and marinate them in a mixture of olive oil, garlic, onion, tomato, and herbs for 6 hours
Then, sear the chicken pieces in hot oil until they're golden brown
Next, remove the chicken from the pan, debone it, and arrange the large pieces on a platter
Strain the remaining sauce in the pan through a wet cloth to remove any excess fat, then add the pineapple syrup, raisins, and 3 tablespoons of golden caramel syrup
Bring the mixture to a boil until it thickens like caramel
Quickly dip slices of pineapple into the hot caramel sauce, making sure they don't fall apart
Then, arrange the pineapple slices and chicken on a serving platter
Just before serving, drizzle the raisin-based sauce over the top.
