In a small pan, heat the olive oil and sauté the onion and spinach with salt
Retire excess water and reserve
Do the same with the garlic

Place the ring mold in the center of a plate
Pile on layers of palm heart, spinach, garlic, and finally another layer of palm heart
Remove the ring mold and serve immediately with cherry tomatoes
