Blend the first seven ingredients in a blender. Reserve
In a small bowl, break the bread into crumbs and moisten with vinegar
When softened, mix with the vegetable puree and blend again in the blender
Season with salt to taste
Serve in a bowl with croutons of whole wheat bread, cubed vegetables, tomatoes, and bell peppers
Garnish with chopped fresh parsley
Serves 4-6 people
Note: If you have herb-infused vinegar, use it instead of apple cider vinegar.
