Peel the watermelon, remove the seeds and cut into chunks
Arrange the chunks in a layer on a baking sheet lined with aluminum foil
Cover with aluminum foil and place in the freezer until frozen solid
Meanwhile, combine sugar, lemon peel, lemon juice, and 1/2 cup of water in a pan
Bring to a boil, stirring until the sugar dissolves
Let cool completely and remove the lemon peel
Process the watermelon in a processor or blender until finely chopped, scraping down the sides as needed, and without stopping the motor add the syrup and blend until creamy
Place in a metal or glass bowl and refrigerate for 3 hours or overnight
Cut into squares, balls, or scoops of sorbet and serve with vodka to taste
Serve chilled.
