Remove the watermelon seeds
Combine half of the watermelon, sugar, and lime juice in a blender
Blend on high speed until the mixture is smooth and the sugar has dissolved
Remove from the blender and beat in the remaining ingredients
Pour into molds and freeze until firm (about 2 hours)
Serve in 8 portions.
