Combine the pineapple, two cups of water, and butter in a pot; bring to a boil
Remove from heat, add the diet pineapple gelatin, and mix well until dissolved
Add two cups (heaping) of water, low-fat cream, and skim milk; mix slowly
Pour into individual serving containers and refrigerate until set
