4 tablespoons of carrot puree
2 tablespoons of agar-agar (12g)

Mix the raspberries, orange juice, and carrot puree and let it rest for 30 minutes
Blend well in a liquidizer and strain
If you don't want the gelatin to be opaque, strain through paper filters
Dissolve the agar-agar in a little water
Add the remaining water gradually, stirring constantly to prevent lumps from forming
Let it hydrate for 15 minutes
Then, heat it over medium heat without letting it boil and add raspberry juice
Distribute into dishes and refrigerate for two hours
Unmold and, if desired, garnish with red fruit
