6 peeled and chopped pineapples (2.8 kg)
1 cup of sugar
2 envelopes of white gelatin dissolved in 1/3 cup of water
1 cup of heavy cream

1 cup of heavy cream
Blend the pineapples in a blender with 1 1/2 cups of water
Strain through a sieve, add 1/2 cup of sugar and mix well
Set aside 5 cups and mix in dissolved gelatin (reserve the leftover pineapple puree to serve as a sauce) and heavy cream
Pour into a 21 cm diameter mold greased with oil
Chill until firm
Unmold and serve with the remaining pineapple, mixed with the remaining sugar
