Dissolve the strawberry gelatin according to the package instructions
Add the grated coconut and cook over low heat for 5 minutes, stirring occasionally
Pour into a gelatin mold and refrigerate until set
Unmold and garnish with whipped cream; sprinkle with grated coconut on top
