Peel the pineapple and blend it in a liquidizer
You should get 3 cups of juice
In a pan, put the juice and bring to a boil
Add the sugar and lime juice and mix only until the sugar dissolves
Cook over high heat for 20 minutes, stirring occasionally, or until the gelatin sets
Combine with parsley and mix
Pour into sterilized jars.
