Sprinkle the gelatin over the water, let it hydrate for five minutes, and then place it over medium heat in a bain-marie until it dissolves. Reserve

In a bowl, mix the avocado with cinnamon and cloves
In another bowl, beat the egg whites until stiff peaks form, gradually adding sugar as you go
Continue beating until stiff peaks form
Add the avocado paste to the mixture, along with the reserved gelatin, and stir well
Pour into molds and refrigerate until firm.
