Squeeze the oranges and lemons and reserve the juice
Cook the grated peels of 1 orange and 2 lemons in 3 cups of water for about 30 minutes, or until they are soft
Add the grated carrots and 3 cups of water and cook for approximately 15 minutes, or until the carrots are soft
Add the orange juice and lemon juice
Mix well this mixture
For each cup of the same, you should add 2/3 cup of sugar
Let it simmer to obtain a pudding point, for about 45 minutes, removing the foam that forms on the surface
Pour still hot into preheated glasses
Cover and cook in a water bath for 10 minutes
Serve 3 1/2 cups.
