2 1/2 kg of fresh figs
3 1/2 teaspoons of cinnamon
1 finely chopped lemon
4 whole canel pieces
2 tablespoons of whole cloves
A small piece of ginger

Wash the figs and soak them in boiling water for 1 minute
Drain, rinse with cold water, and chop off any stems
Combine the figs, cinnamon, lemon, and spices in a cheesecloth bag
Place in a large pot
Let it simmer slowly over low heat for 1 hour or until the gelée is thick, stirring frequently
Remove the spice bag and discard it
Strain the gelée into sterilized hot jars and seal hermetically.
