In a stainless steel or enamel-coated saucepan, combine the pineapple with the papaya
Add the sugar and water and cook over medium heat for 40 minutes or until the papaya is translucent
Remove the fruit with a slotted spoon and place it in a bowl
Add the lime juice to the pan with the liquid and cook at high heat until reduced by one-third
Combine the fruits again and warm them up
Pour into 2 sterilized 1/2-liter containers, let cool, then seal and refrigerate
Serve chilled over fruit, ice cream, or toast.
