11/3 cup of peach puree
1 cup of water

1/2 cup of cider peaches puree
1/2 cup of water
2 1/2 teaspoons of Pernod
6 ripe peaches, peeled, pitted, and diced
1 lemon (use the juice or zest)

Cider
Combine the water and peach puree in a saucepan and bring to a boil
Reduce heat and simmer for 10 minutes
Remove from heat and let cool
Sorbet
Blend the peaches, cider peaches puree, and lemon juice in a blender until smooth
Pour into a mold, cover, and refrigerate overnight
Transfer to a blender and blend with Pernod until light and creamy
Return to mold, cover, and refrigerate for 3 hours or until firm.
