grated orange zest
orange peel (for garnish)

Beat the egg whites until thickened
Gradually add the sugar
Soften the gelatin in the fruit juices and dissolve in a double boiler; combine with the egg mixture and grated orange zest
Refrigerate until it starts to thicken
Fold in the whipped egg whites
Mix well
Refrigerate in a moist mold until firm
Unmold and garnish with orange peel
Serve 6 portions.
