Mix the grated coconut with the egg yolks and sugar until a homogeneous mixture is obtained
Pour in the hot milk, stirring constantly, and add the softened gelatin that has been soaking for 10 minutes in a little water
Bring to a simmer, stirring constantly without letting it boil
Add the raisins
Remove from heat and pour into a mold that has been previously moistened and place in the refrigerator
When serving, remove from mold
Garnish with cashews
To obtain a lighter coconut mousse, you can proceed as follows: Bring the grated coconut to a simmer with sugar in a little water until it forms a thick paste
Add the hot milk, stirring constantly, and add the softened gelatin, continuing to stir and adding the remaining ingredients, except for the egg yolks which are not used in this recipe
Proceed as before, pouring into a mold previously moistened and place in the refrigerator.
