In a large pot, combine the strawberries, gelatin, and lemon juice over low heat, stirring occasionally until the gelatin dissolves
Increase the heat to maximum and let it simmer
Cook on medium heat for an additional 45 minutes or until thickened, removing any foam that forms on the surface
To check if it's set, place a small amount of the mixture onto a chilled plate, wait a few minutes, and tilt the plate: the gelatin should not run
Remove from heat and stir in the pecans
Let it cool and transfer to a glass jar.
