Finely chop the peaches or process them in a blender
There should be a total of 5 cups of peaches
Place into a large pot
Add papaya, sugar, orange peel, and lime juice with ginger
Let it boil and cook for 35-40 minutes until transparent and syrupy
Strain into warm, sterilized jars, and close immediately
Fill to 3 liters.
