In a copper pan or saucepan, pour in the tangerine juice and sugar
Stir and cook over medium heat, stirring occasionally, for 30 minutes

Remove any foam that forms with a skimmer
When it starts to boil, reduce the heat
Stir constantly for another 30 minutes or until you reach the gelato point

Place in a sterilized glass jar, leaving a 1cm gap at the top and store in the refrigerator.
