Mix the sugar, water, and food coloring in a saucepan over low heat without stirring until the mixture reaches the thread stage
While this is happening, place the egg whites in a large bowl and beat them until they become stiff but not too firm, approximately 2 1/2 minutes at high speed
Scrape the sides of the bowl while beating
Pour the hot sugar syrup slowly into the beaten egg whites, continuing to beat at high speed until the mixture becomes light and maintains its shape
Add vanilla, beat again, and pour over the cake.
