4 firm guava halves, peeled and cored
8 tablespoons of sugar
1/4 cup of water

Remove the pulp and seeds from the guavas
Strain to remove seeds. Reserve
Combine sugar and water in a saucepan
Add the guava halves
Bring to a boil, occasionally basting with the syrup until it thickens
Remove from heat, and let cool on a wire rack to drain excess syrup
Let cool completely
Prepare the guava filling: combine reserved pulp with sugar
Cook over low heat, stirring occasionally, until the mixture reaches gel-like consistency
Remove from heat, let cool, and fill the guavas
Serve with creamy cheese, if desired
Serves 6 to 8 people.
